Delicious Recipe- Cranberry Orange Bread


I got this delicious cranberry orange bread recipe from one of my roommates, Amy, and absolutely love it. So, I thought I'd share it with you all.

Cranberry Orange Bread
2 cups flour
1 cup sugar
1 1/2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
3/4 cup orange juice
1 tbsp orange peel
2 tbsp shortening
1 egg, well beaten
1 1/2 cups cranberries, coarsely chopped
1/2 cup chopped nuts (optional: I never put them in)

Preheat oven to 350 degrees. Grease a 9x5 loaf pan (or 3 mini loaf pans). Mix together flour, sugar, salt, soda, and baking powder. Stir in orange juice, orange peel, shortening, and egg. Mix until well blended, stir in cranberries and nuts. Pour into pan and bake 55min (or 40min for the small loaves--don't open the oven before this or they might sink...like they did in this picture) or until a toothpick comes out clean. Cool on rack then wrap and store.
